Strawberry Whipped Sensation

4 cups fresh strawberries, divided
1 can (14oz) Sweetened Condensed Milk
1/4 cup lemon juice
1 tub cool whip, thawed, divided
8 oreo's, crushed
1 TBS. melted butter

Line 8x4-inch loaf pan with foil.

Mash 2 cups of strawberries in a large bowl. Stir in sweetened condensed milk, juice and 2 cups cool whip, poor into pan.

Top with combined crushed cookies and butter, press to set lightly. Cover with plastic wrap or foil.

Freeze at least 6 hours

To serve, invert onto plate. Frost with remaining cool whip, top with remaining sliced strawberries.


Note: I made this recipe the other day and wanted to come back and add a little note on the freezing time. This would be better made the day before needing or early morning if you're having it for dessert that night. It took longer to freeze than the 6 hours, more like 8-10. Next time I make this recipe I'll make it the day before...We did enjoy

RASPBERRY ICE CREAM

4 cups fresh raspberries

1 1/2 cups sugar

Juice of half a lemon

2 eggs

2 cups heavy cream

1 cup milk

Toss the raspberries, 3/4 cup sugar, and the lemon juice together in a bowl. Cover and refrigerate for 2 hours, stirring every 30 minutes. Whisk the eggs in a mixing bowl until light and fluffy, add the remaining 3/4 cup sugar, a little at a time, then continue whisking until completely blended. Pour in the heavy cream and milk and whisk to blend. Drain the juice from the raspberries into the cream mixture and blend. Mash the raspberries until pureed and stir them into the cream mixture. Transfer the mixture to an ice cream maker and freeze following the manufacturer's instructions.

Quick Strawberry Trifle

Pound cake cut into small squares
1/2C orange juice
sliced strawberries
2 boxes vanilla pudding
cool whip

Place cake in trifle bowl or nice glass bowl and pour juice over cake.

Mix pudding per box directions.

Put some of sliced strawberries around sides of bowl, add pudding.

Top pudding with cool whip and top sliced strawberries.

Chill 2 hour or more...
