Easy Salsa

3 medium tomatoes, seeded, chopped
1/4 cup finely chopped red onion
1/4 cup finely chopped red bell pepper
1 jalapeño chile pepper, seeded, finely chopped
2 tablespoons finely chopped fresh cilantro
2 tablespoons fresh lime juice
1 teaspoon finely chopped fresh garlic
1/2 teaspoon salt

Combine all ingredients in medium bowl; mix well. Cover, refrigerate at
least 1 hour.

 

Oven baked Cheese Fries

1 1/2 lbs baking potatoes, peeled and cut into thin strips

1 T. grated parmesan cheese

1 T. vegetable oil

1/4 tsp. salt

1/4 tsp. garlic powder

1/4 tsp. paprika

1/4 tsp. pepper

Combine all ingredients in a bowl, and toss well. Arrange potato strips
in a single layer on a baking sheet.

Bake at 450° F. for 35 min or until golden.
