This is a delicious Spanish wine that can be served with meals or fancy holiday dinners. It can be used as a wine punch or at holiday Christmas parties.
1 bottle dry red wine ( quart)
juice of 1/2 fresh lemon
juice of one fresh orange
1 package of frozen peaches with syrup
Orange peel
Club soda and ice cubes
Peel the skin off the orange set aside then cut orange in half and squeeze juice into a cup. Cut lemon in half and squeeze juice into the same cup with orange juice. Combine the wine in a large bowl or pitcher with fruit juices, frozen peaches and orange peel. Let the mixture stand until peaches are defrosted or you are ready to serve it. Add the ice and club soda mix well. Serve immediately over ice.
8 cups hot Columbian coffe
8 oz. sweet or semi-sweet chocolate
Sugar to taste
1 cup heavy cream
Ground cinnamon, cocoa powder or grated orange peel
Brew a regular pot of coffee in your drip coffee maker. In a saucepan, melt the
8 ounces of chocolate over low heat. Add the sugar to taste and stir in 1/2 cup of the
cream. Whisk in hot coffee a little at a time stirring with whisk. Add remaining coffee
beat well until mixture is frothy. Keep the mixture hot over low heat. Whip the remaining
cream separately. Serve the coffee in cups with whipped cream and sprinkled with cinnamon, cocoa powder or grated orange peel. This is a nice holiday treat.
ANCH HOLIDAY DESSERTS
1-1/2 cups hazelnuts
2 egg whites
1 cup sugar
Lightly grease a cookie sheet. Grate hazelnuts with grater and set aside. Beat egg whites until frothy. Add about 2 tablespoons sugar at a time, beating well after each addition. Continue beating the meringue until stiff peaks are formed. Fold the hazelnuts into the meringue mixture. Shape dough into balls about 1/2 in. diameter. Place on the cookie sheets. Bake at 300 degrees for 25 minutes. With a spatual carefully remove cookies from cookie sheet to cooling racks. Makes about 4 dozen cookies
This is a recipe my mother made at Christmas. She called them Chinese Chews.
1 cup butter
2 cups sugar
4 eggs well beaten
2 teaspoons vanilla extract
2 cups flour
1 teaspoon salt
2 cups chopped Medjool dates
1 cup chopped walnuts
Cream the butter and sugar together well. Beat the eggs and add to the above mixture with the vanilla extract. Add 1 teaspoon of salt to the flour then fold it into the wet mixture. Steam the dates for about 10 minutes to soften them. Then cut the dates into bite size pieces with a pair of scissors. Be sure to remove and disgard the dates pit. Add the dates and walnuts to the batter mix well. Grease and flour a 9 x 13 inch pan. Pour mixture into the pan evenly. Bake at 350 degrees in the oven for 45-50 minutes. When it is browned on top remove from oven. Cool and cut into squares.
